AmByth is the Welsh word meaning "forever", and it is with this future in mind that Mary and Phillip Hart started the first certified biodynamic winery in Paso Robles. The vineyards are all dry-farmed(!), and all wines are made with minimum intervention, including SO2 (in fact, from 2012 on, all the wines will have no SO2 added). Aroma of orange blossom and dried fruit. Gives a nice punch to the palate with textured balanced acidity. Citrus and lime notes upfront with lingering dried ginger, spice and orange peel.
