This Ramato is the wine to change what you expect to come from a white grape! Fermented on skins with native yeasts and aged on lees in huge Slavonian oak barrels. The result is a rich resinous wine, with a intense bouquet of acacia blossoms and a pallete of caramel, apricots, honeyed almonds and italian herbs.
Ripe grapes are hand picked late in harvest. The grapes are left to ferment on the skins for about a month in truncated cone shaped oak vats, without any temperature control, and without adding selected yeasts or enzymes.
Goes With: a perfect wine for cured meats, olives and soft cheeses
