Hans Peter-Schmidt is a professor of Ecology. He came to Valais, Switzerland from Dresden in 2004 and took over the production of these vineyards, immediately converted to organic farming, and uses it as a project to study biodiversity in a real setting. His vineyards have a mix of plant and animal life unlike much of the monoculture vineyards surrounding him. This wine is big, rich and lovely. Both Fendant and the indigenous grape Rèze make for deeper, age-worthy whites with great complexity: almond or hazelnut, earth, white flower and a golden edge of acid.
