The grapes are hand-harvested and added to the fermenter as whole bunches. The bunches ferment semi-carbonically in 5000 liter stainless steel tanks for about 12 days. Result is good extraction of soft fine tannins with delicious red berries, herbs, and superb acidity. Can be had with light chill on a patio or paired with hard cheese on a thoughtful evening. The wine is bottled unfiltered, unfined, and with zero sulfur added.
