This may originate from Prosecco territory, but it is so much more than that. It’s strongly acidic with delicate bubbles and extra body and texture being that it’s unfiltered. Good natural, a bit sparkling. Lime, kvass with birch sap, chamomile and linden. Shows hints of apricot and a touch of salinity.
The wine spends a small amount of time on skins, never has any sulphites added and rests for a minimum of 10 months before being available.
