A short maceration in contact with the skins gives it a beautiful intense color and an unexpected olfactory complexity that will transport you in harmony from fruit to spices. Fuller bodied, but light on its feet with tropical notes and wild herbs with easy, silky tannins. Total crowd pleaser!
Hand harvested with strict grape selection. Soft pressed and macerated for 8 days. Fermentation in steel tanks with indigenous yeast only. No temperature control except when it exceeds 23°C. aged for a few months in stainless steel tanks, then 2 months in the cellar before being released to the market (according to the single vintage). Not stabilized, unfined, and unfiltered.
