Aroma: sweet agave, oak, butterscotch. Stewed or dried fruit… orange rind. A little vanilla, cinnamon and baked bread. Flavor: nice agave mixed with oak, cinnamon and vanilla. There’s a pop to it and spiciness that I like from this brand. It’s fruity to me but cooked fruit. Carmel. Deeper and richer flavor. Dried charry and plums maybe. Finish: long and tingly. I get a little bit of wet grass toward the end which is really interesting. FERMENTATION: 100% agave, Stainless steel tanks, Open-air fermentation, Fermentation with fibers, Fermentation without fibers DISTILLATION: 2x distilled STILL: Copper Pot AGING: American White Oak barrels, Used barrels, Bourbon barrels ABV/PROOF: 40% abv (80-proof)
