This has a pleasant nose of stones with subtle honey and chamomile touches. Austere and pleasant, with great freshness and a long and persistent finish.
Aged in its vessel on the fine lees for 15+ months. The vessels are blended and then aged an additional 12 months in steel. No Malo. Part fermented in stainless steel part in old foudre all with native yeasts.
