Farming: Organic, Biodynamic, Unfined/Unfiltered, No added SO2
Notes of yuzu and demure elderflower on the nose give way to a fresh and pleasant palate with striking minerality and a hint of salt. A perfect apéritif wine! Each variety is harvested, pressed and fermented sepeately. Direct pressing of the whole bunches is followed by one night of lees settling. Spontaneous fermentation in stainless-steel and neutral oak foudres. Wine is then blended and aged in large neutral oak foudres for 4-6 months. Bottled unfined/unfiltered. No added SO2.
