Structured, elegant, solid and straightforward. This 2020 vintage tastes more integrated, the barrels have relaxed and the wine is a little fresher than before. Hand harvested, destemmed, 3-day maceration, alcoholic fermentation with native yeasts in stainless steel tanks followed by aging for 8 months in stainless steel tanks and older barrels, plus 5 months in bottle before release. Bottled unfined, unfiltered, and zero SO2.
