Organic, 40+ year-old-vines on Windygap soils (deep, well-drained residuum and colluvium from sandstone and siltstone); Cab direct pressed as rosé then blended with a splash of the Big Salt white blend; bottled, unfined, after 6 months on lees; no additions except a small amount of SO2; 12.5% ABV
A bright, rich, and dry Rosé with big aromas of cherry jam, green fig and salted lemon. Sourced from certified organic grapes. The wine is light on the palate, with a salty finish. A perfect aperitif before diving into some Big Salt!
