It has the color of ripe lemon and an aroma of great intensity and depth centered on notes of quince and white plum, dried fruits. The nose suggests an opulent and heavy wine, but the mouth is a box of surprises, with light bitters and lots of freshness and acidity. Distinct, vibrant, singular, with enormous character.
It ferments with indigenous yeasts and 30% of the batch passes through old 228L barrels, where it ages for 6 months. It is then transferred to a stainless steel tank where it remains for another 6 months on total lees.
