Coming from a historic plot planted in 1867, this Pais is peppery, spicy, sweet fruited with a lovely smokey backbone that is indicative of that granite soil. Concrete fermentation and gaining for maximum lift, and just a delight to drink. Freshness that reflects the ancient site it comes from. So much fun!
Hand harvested. Native yeast, whole skin fermentation, punch downs, and 6 weeks maceration, time is decided by tasting, manual basket press, and age on lees for a year on concrete sphere tanks then bottled by gravity.
