Cortese grapes grown in the Piedmont region of northwest Italy. The vineyard sits on limestone-rich soils at 280 meters elevation, where maritime influences from the nearby Ligurian coast moderate temperatures and preserve natural acidity. Peron applies biodynamic farming principles and hand-harvests the grapes at peak aromatic maturity. Fermentation occurs spontaneously with indigenous yeasts in stainless steel tanks, maintaining the grape's delicate character. The wine ages on fine lees for five months without filtration or sulfur additions.
