The wine is rich and dense and the Cuvée is complimented with some reserve wines. The palate is elegant, dry and fruity with a complex lengthy finish. Two large and old vertical-basket presses feed first press juice to the cellar below. Alcoholic and malolactic fermentations in large, neutral wooden foudres. Malolactic fermentation is never blocked. Dosage is in the extra-brut range of 1-6 g/L. No cold stabilization or filtration.
