Malvasia, Trebbiano
A wine with notes of overripe fruit with present tannin and a pronounced acidity. Pairing: white meats and first courses. Excellent with medium-aged cheeses.
Balu is Il Cocco’s skin-contact white, a field blend of Malvasia Bianca and Trebbiano from 25-year-old vines in Seggiano at ~480m, planted on silty-clay soils streaked with calcareous formations. Harvested in mid-September for optimal balance of sugar and acidity, the fruit undergoes spontaneous fermentation in stainless steel with no sulfur additions.
