Peppery and spicy with black fruit notes, violet aromas, and forest floor complexity. Well-integrated tannins create a fresh, balanced wine with sunny southern character.
The berries grow in vineyards planted at the foot of Mont Ventoux. Harvesting is carried out manually at the moment of optimal ripeness of the berries; at the winery, the fruits are macerated in whole bunches for two weeks, after which pressing and further spontaneous fermentation are carried out. The wine is aged for 9 months and bottled without adding SO₂, fining or filtration.
