Jean-Louis describes Chapelle des Bois as the "vin de soif" in the lineup...a gulpable, thirst quencher indeed! Overflowing with soft, beautiful exotic red fruits that comfortably rest on fresh, striking acidity. It is the most charming. Often the most delicate, feminine wine of the group with lift, lots of freshness and floral, fruity punch.
VINIFICATION
Traditional vinification without sulfur and with natural yeast at very low temperatures. Semi-carbonic maceration and little or no filtering. Jean-Louis' motto in the cellar is "minimal intervention and maximum surveillance."
