Medium plus body. Medium acidity. Ripe green fruit (apple, pear) lemon zest. Proper straightforward Chardonnay. Weighty in the mouth with hints of meringue and butter, while still holding true to a classic Chardonnay fruit profile.
All the fruit is harvested by hand. Gentle pressing, primary and MLF, 50% in stainless steel vats and 50% in 228L neutral barrels. No additions, with the fermentations occurring naturally. Lees aging for 8 months minimum prior to bottling. Minimal fining, filtration and sulfur additions
