100% Pinot Noir
Powerful nose of rich, ripe red fruit, warm black cherries and Entes plums. Aromas of redcurrants in syrup, cardamom and poppy fruit paste. Dense but slender on the palate, the delicate tannic texture and fresh finish create a digestible, superbly balanced wine whose sapid sensation is amplified by its long finish.
Made from 100% Pinot Noir grapes, the vines are hand-harvested for 40%. Maceration lasts between 13 and 14 days, during which there are 4 to 6 foot treading sessions and some pump-overs. The 100% natural fermentation is facilitated by indigenous yeasts from our terroirs. The aging process takes place in underground cellars and lasts between 12 and 13 months. It is conducted in French oak barrels, 25% of which are new, sourced from 4 complementary coopers.
