It is light, fresh, with notes of gooseberry, under-ripe watermelon and citrus accompanied by floral nuances, with a pleasant acidity and a long finish.
From 30 year old vines planted in 2.5 hectares of soils composed of flint and limestone, the grapes are hand-harvested in early September, sorted and directly pressed. Fermentation lasts 10 days with temperature control in stainless steel and then left to rest on the lees for four months until bottling. Filtered.
