Savory, earthy, dark, wonderful textural, refinement, layers of red and black fruits & a little spice. Beautifully made. Musk and woody herb / stalk. Balanced by a lovely line of natural acid and excellent fine tannins with just the right amount of grip for the fruit weight.
The fermentation lasts between 2 and 3 weeks with daily pumping-over and punching of the cap. Then the wine is aged in oak barrels (50% are new) during 15 to 18 months. A very light filtration is made before bottling so a light sediment may deposit.
