Scents of wild strawberries and litchi when first tasted. The flavor is marked by an exquisite freshness, a fruity and elegant taste inspired by summer. The 15 to 20 year old vines grow in dry-farmed, high elevation vineyards, 1,050 meters (3,445 feet) above sea level. The soil is sandy limestone. The grapes ferment separately in stainless steel tanks. Rosé “de saignée” for the Syrah and “de presse” for both Cinsault and Tempranillo. The wine is then blended, fined and filtered.
