A complex and powerful Chenin with real energy and focus. Rich and layered. Loads of primary flavors and honey. Yellow apples, quince, chamomile, sweet nectar and rich brandy. Matris means "mother" in latin -- a lovely nod to the pedigree of the Chenin grape in Orthogneiss terroirs.
VINIFICATION: Indigenous yeast fermentation, no temperature control
AGING: Aged 10-12 months on the lees in amphora. Nofining, no filtration, no sulfur...just pur chenin!
