100% Sauvignon Blanc
From the Coteaux du Giennois, a patch of chalky limestone just north of Pouilly-Fumé and Sancerre. And all that limestone is evident in this wine, a brilliant mouthful of zesty lime, green peach, fresh cut grass and salty, stony, chalky and gun-flinty bite.
Mechanical harvest, gentle pressing, fermentation in thermoregulated stainless steel vats at 16°C, aging in stainless steel vats for 6 months on fine lees.
