The wine maintains a high level of intensity from start to finish. Racy citrus, fennel pollen, and coiled tannins allow the wine to stand on its own or play a supporting role to lighter fare. A great apero wine.
The fruit is destemmed and macerated with the skins for 10 days before being pressed and moved to neutral French oak to complete primary and secondary fermentation. The wine was moved to stainless steel 3 months before bottling where it received a small dose of S02 before bottling.
