Manual harvest, destemmed and uncrushed the fruit is transferred w/out pumps in small format tanks to carry out the fermentation. Malolactic fermentation in an egg shaped concrete tank. 6 months on fine lees. Racked for sediment. Aged for another 12 months in concrete egg without racking, and with no sulfur added.
