50% Hondarrabi Zuri, 50% Hondarrabi zuri zerratie
Very aromatic with a combination of tangy citrus and tropical fruits on the nose. The pallet is medium-bodied with tannins and acidity that are present, but balanced and integrated. Mango, a little pineapple and tangerine on the palate. Recommended with carbonara, runny cheeses, grilled seafood and pork.
Hand-harvested. Native yeast fermentation in stainless steel on skins for 5 days. Bottled midway through fermentation. Disgorged 8 months later and filled with the same wine.
