This wine is highly aromatic, round and well balanced. Strong copper red, faint ochre brightening on the rim. Delicate dried fruit and nougat, herbal extract, chocolate-nutty touch, pickled cherries and pipe tobacco in the background. Powerful, mineral, fine tannic spice, surprising freshness, discreet sweetness, walnut on the finish, very individualistic wine, a great red wine substitute.
5-7 days of maceration, spontaneous fermentation and malo, no temperature control, 12 months of batonnage. Maturation on lees for 28 months, 60% goes in 225L, 300L and 500L used French and Serbian oak barrels, and 40% goes into 500L acacia barrels. Then all of it goes in 2,000L stainless steel tanks.
