Fermentation begins spontaneously, without any addition of chemicals, and ends 2-4 weeks after the harvest, transforming the grape juice (must) into wine. It rests in a steel tank for about 6 months, the winter cold causes a natural clarification and the sediments (lees) are eliminated through racking. Minimal SO2 added.
