Villa San Carlo is situated east of the city of Verona, on a Western facing hillside, where Gianni "Babbo" Pavesi farms 70 hectares of vines planted among olive groves and woodlands making for the perfect balance of biodiversity. The grapes are hand harvested at optimal ripeness and air dried on special racks in a drying chamber before fermentation, and then fruit goes through a second fermentation over Amarone lees to give it a rich viscosity and profile. This wine has a lot going on with a floral and meaty profile full of cardamom, star anise, and date tones among a surprisingly tangy long finish.
