At the nose, it shows green melon fruit and pleasant notes of peaches and grapefruit pith, followed by lime and ripe yellow pulp. At the taste, it brings out the softness, well balanced with good structure, and the right amount of acidity that refreshes the palate. The balance between taste and smell closes with a long and persistent finale.
The Vallevò Pecorino is fermented dry and aged on the lees in stainless steel tanks, and bottled in the Spring following the vintage. It makes a great dry aperitif and matches a wide range of foods, especially seafood and vegetables.
