A Lambrusco style sparkler. It has more tannic structure than a regular piquette, but all the zippy loud acidity! Tart dark fruits and an excitable attitude! If you are a fan of red sparklers, this is one to try! Please allow the bottle time to settle upright, make sure its extremely cold and open with some caution!
We used fifteen different grapes for this Piquette, pressing off and blending each lot after a week or so on the skins with the water and grape must mixture. As each fermentation was pressed off, we blended it all into one stainless tank. We added back an unfermented Merlot rosé (at 25 brix) to the blend and bottled the juice under crown cap. The unfermented must restarted the fermentation process, giving the Piquette a very lively effervescence.
