Opening notes of of raspberry, rosemary, rocks, black plum and fig compote. Brambly fruits and sweet winter spices follow on the nose. While on the palate dark fruits and hints of bluberry dance and are kept in pace with structured tannins.
Hand harvested from 10-90 year old vines. 70% destemmed, 30% whole cluster. 29 days (1 lunar cycle) before crush. The wine is then pressed and returned to tank where it spends six months on lees to be later aged 6 months in old French barrels.
