Unusual wine in oxidated and delicate volatile style. Dried fruit, ginger, apple, herbal notes wth persistent salinity.
After cold maceration of 3-4 hours the grapes are vertically pressed to go for an hyper-oxidative feel, they then ferment quite slowly at higher temperature. Of course no fining, filtration or added SO2.
