It has notes of red fruit, cherry and black currant, flanked by spicy notes of pepper. As the maturation continues, these aromas are complexed by the notes of "bread crust" which originate from the yeasts that remain in the bottle. On the palate the wine is fresh and dry. The fine perlage is accompanied by a good acidity and a balanced tannic component. Temperature controlled maceration. A pause in steel follows on the noble scum for a refinement of about 7 months.  Refermentation in the bottle using natural yeasts and as liquer de tirage the must of the same grapes as the starting base. At the end of the fermentation, the yeasts remain on the bottom and actively participate in the maturation of the wine Vintage: NV Varietals: 70% Lambrusco Salamino and 30% Lambrusco Grasparossa Farming: Organic
