Farming: Organic, Unfined/Unfiltered, no SO2 added
An intense whiff of white and black pepper on the nose, followed by the prismatic flavor of watermelon jolly rancher on the palate. This chilled red reminds us of an Italian cerasuolo in texture and color, fused with the lively and diverse bouquet of California zin. Enjoy deeply chilled at brunch.
Minimal intervention farming practices. 60 year old head-trained vines. Native yeast. 3 day maceration on skins, then foot-stomped and gently pressed using a tiny bladder press over the course of 1 full day. Wine is stored directly in neutral barrels after pressing and aged for 3-4 months. No racking. Bottled sans soufre in January 2021.
