Xinomavro, Malagousia, and Assyrtiko
Hazy orange colour. Smell of peach, elderflower and grapefruit. Taste of fleshy white peach, pear, honey and candied tangerine. Last years favorite is back with a bang! DO NOT UNDERESTIMATE how EXCITABLE and BUBBLY this bottle is! (open this one over a sink). Great mouthfeel with small bubbles and some great fruit forward flavors.
After halting primary fermentation, a blend of Assyrtiko 50% and Malagouzia 50% is settled off of its primary lees. Next year we add fermented must of Xinomavro to this ready wine in the bottle providing the sparkles and leesy feel. We do not disgorge, leaving the wine hazy, creating broader palate weight, pleasing textures, and balance throughout. This special bottling is done entirely by hand. Unfined/Unfiltered. No added SO2
