Josep Foraster follows biodynamic principles in producing all their wines, and this cava is no exception. The wine is made following the traditional "Methode champenoise" method with a second fermentation in the bottle, aging in the bottle for a minimum of 18 months up to 30 months. Only native yeast is used.
