Farming: Sustainable, Unfined/Unfiltered
This wine is herbal on the nose with bright notes of cranberry and pomegranates, zingy minerality, and the perfect amount of salinity on the palate. Punchy, interesting, and multi-dimensional.
The grapes are hand-harvested in early September, de-stemmed and allowed to macerate for five days. Spontaneous fermentation takes place for three weeks in stainless steel and old oak casks (650L) with temperature control. The wine spends six months aging in the same casks. Unfined and unfiltered.
