Early hand harvest (first week September – Touriga Nacional: bunch thinning) to 15kg cases; All white varieties fermentation with skins, joining Touriga Nacional pressed bunches two days after fermentation begins. Natural fermentation in old french oak barrels and stainless steel vats.
