A habanero spirit that showcases our low temp, low pressure approach to distillation. Here the capsicum, the piquant component of the chillis is left behind, allowing the full spectrum of the habanero flavor to shine. Juicy red fruits, melon, green pepper all come through. We macerate the chillis in a base made from barley koji and Pilsner malt, and then use the chillis to make a habanero vinegar which is also distilled and blended into the spirit to balance everything. Here we use a habanero vinegar to rectify the spirit to its final ABV, 27%. The capsaicin molecule, the irritant in chili, is too heavy to evaporate during vacuum distillation so you get all the vegetable flavor without any of the burn.
