It is a lovely wine with a fine perlage and hints of dried strawberry and rhubarb. The aftertaste is powerful, giving the final round a dryness supported by a good acidity.
The grapes were harvested by hand, sorted, destalked and pressed followed by the fermentation in amphora using natural yeasts. The Second fermentation and ageing in the bottles lasted for 54 months. The dègorgement was made with unfermented must from the subsequent vintage with no added sugar or yeast resulting in this fine pinkish extra dry sparkling wine.
