2020 - Sauvignon Blanc
This is a precise, clean and pure style that offers grassy, gooseberry and green capsicum characters. It is light-bodied and taut with a fine line of acidity on the sinewy finish.
The grapes are de-stemmed and pressed, then slowly fermented in stainless-steel at a cool temperature using carefully selected yeast. After fermentation the wine remains on yeast lees for 6 months in tank to build richness and mouthfeel. The wine is then racked and fined, filtered and bottled, capturing the essence of the land.
