“Bim” is slang for “word”/“dope”/“bet”, and this wine was created to commemorate the natural wine festival called Bim that he also started. Bright and juicy, it smells like candied blackberries and tastes like crunchy black fruit, licorice and purple rocks. Complex and soulful and constantly evolving, this is a slightly addictive drink, especially with a slight chill. Tiny production, worth the hype. Harvest: by hand Winemaking: carbonic maceration, spontaneous fermentation in stainless steel with indigenous yeasts Aging: in stainless steel Fining: none Filtration: none Added S02: none
