Zsolt Sütó culivates 12 hectares of vines in the village of Strekov, in Slovakia which featuring ponds and marshland which create a unique microclimate rich in clay and loam. Zsolt’s fermenations take place in open topped barrels with no sulfur, no intervention, and a lot of skin maceration. Grapes are hand harvested and left in whole bunches. The bunches are pressed and the juice ferments in a 220-liter open topped barrel for about 2 months. Warm milk, butter, butternut squash in aromas , on the palate medium acidity with bitterness in the aftertaste. Cloudy, but not too funky. Pear and banana on the nose. Med acidity and minerality.
