Notes of crushed apple, herbs, playful hint of floral with bread crumbs on the nose. Beautiful balance with notable acidity. A 100% Sauvignon Blanc cuvée, The grapes are hand-harvested and destemmed. The juice ferments in 7 year old 600 liter barrels for about 25 days. Elevage takes place in the same barrels for 15 months. The wine is bottled unfiltered, unfined, and with zero sulfur added.
