All Liten Buffel wines are low intervention - no chemical additives or preservatives, no added sugar or adjustments to acid levels, no added yeast. The winemaker lets fermentation run its course, without doing anything to stop it. The wines go through what is known as malolactic conversion (making them soft and creamy). They are not filtered (meaning you might find some sediment).
10% skin fermentation, 12% botrytis, wild fermentation, full malolactic conversion, aged 9 months in barrel, unfined, unfiltered
