This wine is dedicated to the "paone"- the Peacock - a symbol of the noble history of this place. The bouquet mixes earth and fruit, with notes of citrus, hay and herbs. It is silky and full in the mouth with rich flavors and a finish that lingers with notes of citrus and smokey minerality. Vinification: Average vine age 35-40 years old. Spontaneously fermented for about two weeks. Aged 1 year in inox steel tanks, four months in the bottle.
