I want my wines to be honest, sincere and joyful. 

I believe in holism in science, as an approach to live in complex systems as agriculture is. I try to answer my questions where do things come from? I listen a lot of opinions coming from science world or experienced farmers. I do not believe in partial technological solutions: resolving one problem and then causing three new. In the wine cellar I decided to control only two things: temperature and oxidation, everything else I’m only monitoring."
